Avocado Pico

Hello August! It’s officially my birthday month and I thought I would kick it off by sharing what is possibly the world’s simplest recipe. It’s a perfect summer salad, taco topper, and an amazing appetizer for gatherings. Now I like to call it avocado pico, even though some people have told me this is considered guacamole. But to me, guac is either smashed or blended avocados with minimal tomatoes. Or if you want to make it a little on the chunky side, it’s still mostly made of avocados. I consider this more of a pico de gallo recipe with avocados added in. Boom, you have avocado pico and these best addition to taco night!

Now I’m not going to be one of those bloggers who has to tell an intricate life story to go along with my recipe because a) it’s annoying to have to scroll through 97 paragraphs to get what you want and 2) it’s really hardly even a recipe, to be honest. But, I love it, my friends love it, so if you like avocado you’re probably going to love it too.

I’ve listed the ingredients above, but there are a few optional additions you can toss in. Add some chopped jalapenos if you’re feeling spicy, some minced garlic is always a good idea, and if you love lime, add in that zest!


First, you want to chop, dice, and slice your ingredients. Usually, my onion is more finely diced than this, but I rough chopped some slices that I had in the fridge already. Next, add all those bits into a medium to large size bowl. Squeeze the lime juice on top and add salt and pepper to taste. Give it a good toss and then set it aside to let those flavors mingle.

And that’s it! Literally ten, maybe fifteen minutes of work, and you have a veggie-packed addition to taco night or a super simple appetizer to add to your dinner plans. The lime juice helps keep your avocado chunks nice and green, so it stays pretty in the fridge for a couple of days.
