Fall has officially arrived in the Midwest, bringing cooler temps and rapidly changing leaves. When the weather starts getting colder, I tend to crave hearty soup and stew-style dishes. One of my favorite cool-weather dishes is a bowl of spicy chili! And seeing as I haven’t done a recipe round-up post in a while, I thought now would be a perfect time to do so. I scoured the interwebs to find some of my favorite chili recipes to share with you guys and have compiled them all right here so you don’t have to wade through all the random Pinterest posts or web links. I’ve included them all, spicy beef chili, green chili stew, and even a vegetarian option. Without further ado, here is my Chili Recipe Round Up-Perfect for Fall!
- SkinnyTaste Easy Black Bean Vegetarian Chili
Seasoned to perfection and topped with the accompanying spiced yogurt recipe, this dish is sure to be a meat-free favorite among friends and family. This option is also a quick, weeknight-friendly meal, taking only twenty minutes to whip up. You can easily make it vegan by omitting the yogurt, or switching to a cashew or coconut based yogurt. - Spend with Pennies Green Chili Stew
If you’ve ever been to the Southwest part of the United States (specifically New Mexico), you probably noticed that they put green chilies on EVERYTHING. And with good reason, because they are delicious! Green Chili Stew is a staple around Albuquerque and you can find it on the menu at nearly every restaurant you stop at. Or make it at home with this tasty recipe. You can eat it as is, freeze leftovers, or use it to top breakfast burritos to give your first meal of the day a kick in the pants! The best part about it? You can typically find the green chilies in mild, medium, hot, and hotter so you can customize your level of spice. - How to BBQ Right Smoked Chili
This is a favorite chili recipe around our house. But be forewarned, if you are following the spice blends to a T, this is gonna be one spicy meal! You can ease up the heat by making a few swaps or reducing the cayenne pepper. We also like to use ground beef and chorizo in place of the roast and breakfast sausage. Don’t worry if you don’t have a smoker, you can easily let this pot simmer on the stovetop before diving in! - Lexi’s Clean Kitchen Turkey Chili
Looking for that classic chili taste, but wanting something a little healthier? Have no fear, Lexi’s got you covered! Switching ground beef out for the leaner ground turkey cuts the fat. She also uses clean, whole ingredients and seasonings without added sugars. Keep this one on file for when those New Year’s resolutions hit! - Platings and Pairings Easy White Chicken Chili
This chili envokes all the comfort feels! Slightly spicy, it would also be the perfect dish to have on hand when you’re feeling blah. I can’t lie, while I haven’t made this myself, I loved it so much I asked for the recipe. Loaded up with tender chicken and white beans, the heat comes from the diced jalapenos and green chilis. It paired perfectly with advocado and a grilled cheese!
